The good old standby is still so good with just picked home grown tomatos and a really good Imported Tuna in oil. A wonderful luncheon dish on a hot day. Serve cold, as a salad or pile high on chibatta roll with a sliced tomato instead of stuffing it. Enjoy
6 med tomatoes hollowed out and let drain, then stuff with 2- 7oz cans of imported tuna in oil drained. add 2 mashed anchovy fillets add 1 Tab. Dijon,1 Tab. raisins 2 Tab. mayo or yogurt, salt and pepper blend well.Fill tomatoes and the put on a bed of lettuce over the top of everything sieve 2 hard cooked eggs mixed with fresh chopped parsley and add a lemon wedge.
