TNT Mixed Summer Salad

This is a great salad that we make for BBQ's. It's one you can play around with and make your own. It seems to be a crowd favorite and there is never any left.

Chopped red onion (I let it soak in ice water first to take away the bite)
green olives with pimiento ,drain liquid (occasionally I'll get the ones with capers)
chopped red and green bell pepper
chopped hearts of palm
artichokes
cubed cheese (we used cheddar in the states and red liesture here in London, but you choose which ones you like)
cherry tomatoes sliced in half

Toss in dressing.
We've used 2 dressings. Robust Italian and yesterday we used a bottle of olive oil and fresh herb vinaigrette, which I think we liked even better. You could play around with some of your favorite dressings for the salad and pick which one you like.

Yum! Very similar to the Bahamian Salad I first had at Paradise Island Resort when the resort was still owned by Merv Griffin (before "Atlantis").

One of my favorite salads of all time!
