Afavorite around here on sunday or any time we grill...Peel and Slice 2 cucumbers and put in bowl with about 1 tea. salt. let stand 30 min. In a large salad bowl combine 2/3 c. evoo, 1/3 red wine vinegar, 2 cloves crushed garlic,1- tea. basil I use a little more and use fresh chopped. add some salt and pepper. Put in about 10 mushrooms sliced and1 bunch green onions sliced green and white. Drain cucumbers and pat dry. add to bowl..Top this mix with1 /2 bunch fresh chopped parsley and 1/2 bunch fresh chopped cilantro. mix gently add tomatoes,chopped about 3 large or 6 med., put a chopped red bell on top..Cover and refrigerate about 4 hours..Just before serving toss lightly and then add 1/2 lb. of grated swiss cheese and 6 hard cooked eggs sliced..Add some nice crusty warm bread, a cool drink and enjoy
