Yum Yum Salad

This is my wife's favorite:

Yum Yum Salad

Ingredients:

1 cup of Sugar
1 medium can of Crushed pineapple
1 package of Knox gelatin (flavorless)
12 oz of Coolwhip (1 of the 8oz packages)
1 cup of Pecans chopped (preferably by hand so they aren't too small)

1 pint (2 cups or 16 fl oz) of Cottage Cheese
Juice of 1 lemon

Drain pineapple juice, discard the juice.
Heat sugar, pineapple and lemon juice.
Dissolve gelatin in cup of water
Add to pineapple mixture.
Chill.
Then beat till foamy.
Fold in remaining ingredients.
Chill till set.

Interesting. With texture even.

I wonder how many "Yum Yum Salads" there are. DW has a cherry rendition that might have some crushed pineapple in it too.

Mine's orange jello, cool whip, crushed pineapple, cottage cheese, mandarine oranges. I go low fat on the cottage cheese and low cal coolwhip but it sure tastes refreshing.

See, that here is known as Lazy Wife Salad (honest, that's the name - no offense to the DW's here!).
