The gravy will go over the potatoes and carrots. If I have leftover gravy, I try to use it the next day with an omelet or such.

SO mashes up the leftover CB and veggies and fries them up as a "hash"

I add a couple of spoonfuls pickling spices, a couple of bay leaves, garlic, and sometimes onion. Cabbage and veggies go in 20 minutes prior to serving.
