Just us this year but still making a full dinner... ham, scalloped potatoes, asparagus, honey-glazed carrots and biscuits. No dessert unless I get inspired. :-)

We had colored eggs and Italian Easter Meat Pie (Pizzagaina) for breakfast

(I didn't take new pictures but here are some pictures I have with my recipes. They usually always look the same. LOL)





Dinner will be stuffed mushrooms, smoked ham shank, asparagus, mashed potato, baked sweet potato and garlic bread. I will try to get some pictures of dinner tonight.

Dessert will be cheesecake with cherry topping.

We're getting together with my GF's family this afternoon.
I smoked a turkey breast this morning and have a green chili hominy casserole ready to go in the oven soon. I believe her cousin is bringing a ham, not sure about the rest though. It will be nice to see everyone again as we only seem to get together during the holidays.

I just finished a big chocolate sundae with Spanish peanuts.
Apparently DQ is closed on Easter... but fortunately the town store isn't.

Thank you, Kayelle! Your post made me smile. We did indeed make beautiful memories. As luck would have it, it is one of the best poppy displays I've seen in a few years, and my little 3 yr. old grandson Tyler walked the whole 3 miles with us - what a trooper. I'll put a couple of pics in the random photo thread.

I've never had pickled eggs. Are they easy to prepare, and how do you use them? Can you eat them as is?

No big dinner this year. There's not many of us and we chose to go on a road trip yesterday, so there was no time to cook a big dinner. I miss the ham, scalloped potatoes and asparagus so lived vicariously through many of your dinners here. Maybe next weekend we'll have a belated ham dinner.

I'm going to take a couple garlic/parm thighs from last night's dinner and shred them, skin and all. This will be mixed with cooked bacon and warmed in the grease with cooked pasta.
