How many lbs. of mussels per person?

Hello folks!

So my bachelor uncle has me cook a multi-course dinner party every time I go visit. I'm cool with that, since I love cooking and setting tables. Now, his guests tend to be higher end professionals, and they are major foodies. These people dine at michelin star restaurants and only drink fine wines. They're a little intimidating to cook for. Heh. The party is next week.

Can I have your opinion of this menu? AND, since the main is moules frites, how many pounds of mussles should I get to feed eight people? 1.5 lbs per person?


Charcuterie Platter with Three Homemade Mustards
Moules frites (and crusty bread)
Watercress and Goat Cheese Quiche (for the vegetarian main)
Warm Frisee and Cherry Salad
Chocolate Pots de Creme
Cheese and Fruit Platter

With the rest of the menu, I'd probably go with 1# per.
