Don't heavily season batches until after you combine them. Once they're combined, just season to taste.

My sister makes her spaghetti sauce and meat balls in a large electric roaster. If you don't have one maybe one of your friends does. It is great for transporting the sauce too.

Personally, I wouldnt be too concerned about the meatballs coming out evenly in terms of spices and size, it's called home-made cooking. I bet your friends will love it either way. They wont notice the size and spice level per meatball lol. Have fun Bucky!
