Banana Muffins (+Fiber)
1 beaten egg
1 cup mashed banana
1/4 cup milk
2 tbsp oil
1 cup sifted flour
3 tbsp sugar
2 1/2 tsp baking powder
1 cup whole bran


Sift dry ingredients together (except bran), stir in the bran. Mix wet ingredients together in a separate bowl. Pour wet into dry and stir just til incorporated. Bake at 400 for 20 - 25 minutes.

I like how there is no butter involved in the ingredients to make muffin! Absolutely have to try this.. Thanks!
