Oatmeal Muffins
1 cup sifted flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1 cup uncooked rolled oats
3 tablespoons oil or melted shortening
1 egg, beaten
1 cup milk

Sift together baking powder, salt and sugar; add to flour and stir in oats. Mix in oil, egg and milk. Fill greased muffin tins 2/3 full. Bake in pre-heated 425 oven for 15 minutes. Makes 1 dozen muffins.
If desired, combine 2 tablespoons sugar, 2 teaspoons flour, 1 teaspoon cinnamon, and 1 tablespoon melted margarine and sprinkle over muffins before baking.

I don't know where I got this...maybe from ex #one's grandma.

I just made oatmeal muffins! Do you use old-fashioned or the 5-minute type of oatmeal? My recipe called for old-fashioned, then you soak it for an hour in milk.
Yours sounds good!!

Just plain old rolled oats. I don't think they had the quick-cooking kind back in the stone ages.
