Why do my quick breads always sink in the middle?
Every time I bake a quick bread such as banana bread or pumpkin bread, it sinks in the middle, rather than rising. Why would this be? It's happens with various recipes and I always follow them exactly. My baking powder and soda are brand new.

It's possible that the pan you are using is not the correct size for the amount of batter that you have. Is it fully cooked in the middle and just falls or is the batter not cooked?

What altitude are you? You could be using too much soda/baking pwd. Another reason is that the oven may be too hot.

There are several possibilities.

The oven may not be hot enough. If you haven't ckecked it with an inexpensive oven thermometer, I suggest you start there.

check the dates on your baking soda/powder. Even if you just purchased them, they may have been sitting around the store and/or warehouse for a while. OR, they may have been stored near excessive heat.

Checking that your oven is operating at the correct temp. is the first thing to do.
