This trifle is a combination of great recipes. For the banana bread, we will use Audio's banana bread recipe (Audio was a great lady that used to be a part of the DC community).
Audio's Banana Bread Recipe
The BEST Banana Bread
Butter a non-stick bread pan, then flour well. (The flour is really important for the bread to “climb” against while baking. I had not done that before, and it makes a huge difference!)
Combine and mix well the following dry ingredients in a bowl and set aside:
2 cups AP flour
¾ cup sugar
½ cup toasted coarsely chopped walnuts
½ teaspoon baking soda
½ teaspoon salt
In another medium bowl, coarsely smash 4 ripe bananas (I used a potato masher , but you can use a large spoon or spatula, and don’t puree – the banana needs to be chunky)
To the bananas, add and combine: (but try not to reduce the banana chunks)
2 large eggs, beaten
6 Tablespoons melted butter
1 teaspoon vanilla
¼ cup buttermilk or plain yogurt
Pour the wet ingredients into the dry ingredients and gently FOLD until the flour is thoroughly moistened. Pour into the prepared bread pan and spread the mixture evenly across the top.
Bake in a preheated 350-degree (F) oven for 45-50 minutes.
Bananas Foster (non alcoholic version)
Ingredients:
4 tbsp. salted butter
1/2 cup dark brown sugar
2/3 cup maple syrup
1/2 teaspoon cinnamon
4 bananas, peeled and sliced into rounds
1/2 cup Chopped pecans
Melt the butter; add the brown sugar, syrup, cinnamon and pecans. Stir until the brown sugar is liquified. Add the bananas and simmer for 5 minutes.
This usually served over vanilla ice cream to make Bananas Foster. We are going to serve it over the Banana Bread to make a trifle.
Break up the banana bread into chunks and place in a pretty, glass bowl, or trifle dish. Pour the hot, bananas foster into the bowl and gently fold together. Serve with a good vanilla ice cream or gelato on the side. Put a little whipped cream on top of the trifle.
