Cranberry 'Eton Mess'

Eton Mess is a pudding that was 'invented' at Eton College, the school where Princes Harry and William were educated... this is a Christmas version, using cranberries.

12 oz fresh cranberries
270g/9.5 oz orange juice and the grated zest of one orange
1 tablespoon caster sugar
7 fl oz double cream
2 tablespoons of icing sugar, sifted
2 tablespoons of Armagnac
10 small ready-made, shop-bought meringues (unless you happen to have a few on hand!)

Put the cranberries in a heavy saucespan with the orange juice, zest and sugar. Place over a low heat and cook slowly until soft. It may be necessary to add a little water but it should be a syrupy consistency, ie not too 'watery'. Strain off the juice and reserve the cranberries and zest. Allow to cool.

Whip the cream lightly with the icing sugar and Armagnac.

Crush the meringues into large chunks. Add the cream and three-quarters of the cranberries with half of the syrup. Mix to a marbled effect and pile into tall, individual glasses.

Decorate with the remaining cranberries and drizzle the remaining syrup on top.
