Poached Peaces and Bananas in Butterscotch Sauce

I this together tonight and it was yummy. Sorry, don't have pictures.

Ingredients:

10 slices frozen Peaches (You can use fresh if you want)
1 large, ripe banana (with lots of brown spots on the skin but still firm)
4 tbs. dark brown sugar
1 tsp. vanilla extract
1/4 cup heavy cream (whipping cream)

Melt butter in a heavy skillet. Add the peach slices and saute until thawed. While the peaches are cooking, peel and slice the banana into half-inch chunks. Add the brown sugar and vanilla to the pan and stir everthing to combine and coat the peach slices. Let simmer for three minutes. Add the banana slices and simmer for 1 minutes, then flip all fruit. Let simmer for 1 minutes more. Add cream, cover, and simmer for five minutes. Serve hot over shortbread, halved biscuits, pancakes, or just eat from bowls. Oh, and this would be great served with vanilla ice cream.

I was telling DW that this stuff was so tasty that I was thinking of making a large batch and canning it, or at least putting it into a jar and then into the fridge. It was that good. But then, I'm sugar challenged and should stay away from such things except for on a Saturday night when I get a craving.;)

Oh all right, I'll be good.:(
