| | Courgettes with cheese & bacon I made these for our visiting Aussie cousins...they ate the lot!! Don't they feed them over there? lol Courgettes with cheese & bacon Serves 4 Prep Time 10 mins Cooking Time 45 mins Ingredients - 8 Small courgettes
- 1 medium onion, finely chopped
- 3 oz/85g Butter
- 1 ½ oz/40g dried breadcrumbs
- 1 ½ oz/40g Cheddar cheese
- 8 Rashers thin unsmoked streaky bacon, finely chopped
Method - Top and tail courgettes and par boil 5 minutes
- Drain and split into two down the middle
- Put into a buttered dish
- Saute the chopped onion in butter for a few minutes,
- Sprinkle over courgettes
- Mix breadcrumbs and cheese together, and sprinkle over each courgette
- Top with the chopped bacon and dot with butter
- Bake in a preheated oven 375°F/190°C/Gas mark5 till bacon crisps
- Serve
