Island menu, Saturday, April 15th
I'm doing an island theme menu this Saturday. Anyone interested in joining me?

appy'sHawaiian Cream Cheese Balls With Ginger and Coconut
coconut shrimp and kahula pork
hawaiian cole slaw for me and hawaiian fried rice for picky ones.
Zucchini bread, and a pie that I don't have a name for.

that pie must be a key lime pie or something with coconut, TG. Sounds like you should have plenty o' coconut already.

This is the recipe
3 cup Graham Cracker Crumbs
3/4 cup Melted Butter
7oz canCrushed Pineapple, drained
4 cup Powdered Sugar
1 cup Softened Butter
2 Eggs
1 1/2 tsp Vanilla Extract
5-7 Sliced Bananas
2 cup Whipped Whipping Cream
1/2 cup Chopped Pistachio's
Mix cracker crumbs and melted butter. Press into a 13 x 9x 2 pan.combine sugar, butter, eggs, and vanilla. Beat 12 minutes. Spread over crumbs. Layer bananas and pineapple. Top with whipped cream and nuts {optional}

well, it's not a key lime pie, but the ingredients sure do sound good!

Hi Texasgirl your posting reminded me of my recent trip to Hawaii. For dessert we had a guava chiffon pie (this was at a Luau) and it was so incredibly delish yet so simple. Atleast it tasted simple

Basically had a prebaked pie shell
A guava puree (I am sure you can buy nectar and reduce it until it's thick and syrupy and cool it)
It was folded in gently with loads of whipped cream

It was one of those no baked filling and everyone was going for seconds.

For the entree (since I don't eat pork) they had a grilled chiken with mango that I enjoyed. It was basically chicken that was grilled (did not have many spices) and then it was sliced and stir fryed with medium mangoes (not totally ripe). The mangoes went really well with the grilled chicken and it tasted sort of sweet and sour.

I had an island-themed wedding on the 9th, our menu ended up being:
Cuban style pork, black beans & rice (a complete success)
Taco salad (??? a replacement for the conch fritters we were supposed to have - not very popular)
Lots and lots of cuban bread
Planter's punch
The world's greatest key lime pies
Followed by beer for the men and cocktails for the ladies
There might have been more food, I forget, I was too nervous to think!
