Champagne Burra Peg Cocktail

3 fl oz good, well-chilled Cognac
1 lump sugar
Angostura bitters
Dry Champagne
Curls of lime peel

For each person, take a very large glass, 14-16 fl oz
Pour in the Cognac and dousing a cube of sugar with angostura, put in the glass
Fill the glass with Champagne and top with a twist of lime peel.
