Hot Apple Cider with Rum

I'm watching Emeril's Halloween Special, and he made this wonderful drink...leave the alcohol out for the Kiddies. Or not...one or two sips and they'll sleep real good.

Hot Apple Cider with Rum

Recipe Summary
Difficulty: Easy
Prep Time: 5 minutes
Cook Time: 10 minutes
Yield: 2 quarts, about 8 servings

1 apple
2 teaspoons whole cloves
1 orange, thinly sliced
2 quarts apple cider
1/2 cup light brown sugar
1 teaspoon allspice
Pinch grated nutmeg
1 cup dark rum
Cinnamon sticks, garnish

Stud the apple with the cloves. In a medium pot, combine the studded apple and remaining ingredients except the rum. Slowly bring to a simmer over low heat. Simmer for 10 minutes. Remove from the heat and add the rum. Discard the apple. Ladle into mugs and garnish each with a cinnamon stick. Serve immedately.

They were using Myer's dark rum, by the way. HB will be thrilled to have a reason to buy a bottle.

I've made hot apple cider, with rum and a cinnamon stick, very good. It's cider season, so it's time to make this again!

thanks for sharing. For some reason, I just can't concentrate when he is explaining what he is doing. I just think he is more entertaining than preparing the food. I do believe his recipes are outstanding but if he would tone it down a bit. I am in the minority else he wouldn't be where he is. Another reason to drink apple cider. You think it makes difference with the rum? I have seen the dark but bought the light
