Eric asked if I could share this one - I'd nearly forgotten about it! It's really wonderful :)

Rose Petal Liquer
3 c. loosely packed, deeply fragranced rose petals
(make sure they are pesticide free!)
1 quart vodka
pinch ground nutmeg
1 c. rose petal sugar (recipe below)
1/2 c. drinking water
1 tbsp. rose water (optional)

Remove white heel from petals. Gently wash/dry petals & crush lightly. In a 1-1/2 quart glass or enamel container, combine rose petals, vodka, nutmeg. Cover tightly; let stand in a cool, dark place to steep for 2 weeks. In a small saucepan, gently boil rose petal sugar & water over medium heat 3 minutes; stir often to dissolve sugar. Cool. Cover & refrigerate until used. When mixture has steeped 2 weeks, strain through coffee filter into clean glass container. Stir in enough sugar syryp to taste. For more pronounced rose flavor, add rose water. (If desired, stir in a few drops red food coloring)
Serve chilled after dinner, or add to champagne or soda.

*Rose petal sugar: using same method of cleaning/drying/crushing petals. Add to 1 c. granulated sugar in tupperware. Shake often to release flavor. Taste is more pronounced with time.
