I made some last night and it was delicious. Leeks, Arborio rice, broth, green peas and cheese.

I was sloppy and didn't clean the pan after wilting the leeks and before toasting the rice, so it had some burnt bits of leek that made it look bad.

I made some risotto last week, I cooked brown rice in coconut milk and a bit of water, fish sauce, and a few other yummy things. Threw some shrimp into it when it was done. Very tasty! The brown rice nuttiness adds to the coconut milk for sure.

I was going to make it this last week but could not find any dried porcini mushrooms. I finally found some on Saturday so it will be soon.

I know...wonder what I'm going to do when I post my rice cooker risotto. I made it with the wild rice blend in a RICE COOKER...turned out nice and I only stirred it three times.
