What could I make for dinner with a deboned rotisserie chicken, and some HOT green chile sauce that will require sour cream....

Tacos, fajitas, chili, sopa de pollo, and enchiladas are the first things that come to mind.

I made a skillet hash of potatoes, chicken, green chile sauce, sour cream and monty jack and sharp cheddar cheeses.
But tomorrow night I will make tacos!!
