A gratin would be nice with caramelized lemon juice. You can roast cut lemons, face down, and squeeze the juice on top of the gratin.

Wow, some awesome ideas here. I was going to suggest sauteed onion and garlic - boil and mash sweet potato transfer to a dish and top with cheese (if you have some) for a delish potato pie yum yum!
