is it healthier to use margarine or oil, and if so can you substitute oil for margarine in cookies or will it not come out the same??

It won't turn out the same. Margarine might be healthier but there's alot of additives in it. It's not a good idea to substitute oil for margarine. But, if you can find an oil recipie, I've found it turns out better.

I have Norwegian and Swedish recipes from my grandmother that DO NOT work if you sub the butter for margarine, shortening, or oil. I like unsalted butter for most of the things I bake.

I like margarine. It gives a very nice flavor. But in regular cooking (not baking), I use extra virgine olive oil. It is very healthy.
