Yes, very interesting. Must ask my vegan friend if she's tried this.

I've seen Cool Whip used on Food Network that seems to come out of a can. I thought it was a synthetic cream substitution rather than something like this.

I've never seen canned Cool Whip. I have used (aerosol) canned whipped cream (real cream).

Isn't Cool Whip already vegan?

It's high fructose corn syrup, vegetable oil and chemicals.

It always helps to actually read the article before commenting It's a recipe with an imaginative name.

Vegan Cool Whip
(or coconut whipped cream)

1 can full-fat coconut milk (or coconut cream)
sugar, stevia, or powdered sugar to taste
optional: fruit (banana whipped cream, anyone?)

She's got a chocolate version, too. It seems to me that chilled evaporated milk (overnight? 24 hours) with ... lemon juice added has been touted as a substitute for whipped cream...mind you, I probably could confirm that with an Internet search, but that has always stuck in my brain for some reason...not sure how it would taste...or how well it whips...
