Subbing for Cream and Creme Fraiche

To lighten a recipe calling for heavy cream/half-and-half, will evaporated whole milk work as a substitute? Can I use whole-milk greek yogurt in place of creme fraiche? Results would be different, but still good?

Creme fraiche can be substituted with sour cream and I think the greek yogurt would work there, but no, evaporated milk is completely different from heavy cream. That is one thing I never use a substitute for so I am of no help there.
Living gluten/dairy/sugar/fat/caffeine-free and loving it!
