Vermouth for White Wine in my Spaghetti Carbonara recipe?

I'm making spaghetti carbonara tonight, and I noticed that a lot of recipes call for dry white wine. I'm wondering if it would be alright to sub dry vermouth for the wine...

What recipe are you using? Carbonara isn't supposed to have ANY type of wine in it.

Thanks for the fast reply! Joy of cooking calls for it in the bacon, simmered until the liquid is gone. This one also calls for it: Recipe 157958 --- Marcella Hazan's Spaghetti Carbonara: Main Dish Pasta

Yes you can use white vermouth. Its a good sub.

Hi Robsanx,

IMHO, Spaghetti Carbonara does not contain wine - just pasta, eggs, bacon and parmigiano reggiano or gran padano. Wine has no place in a good Carbonara, IMHO!
