Fresh vs. dried

Given a choice between the two, which would you prefer for making a stew or pot roast:

Fresh herbs but canned stock, or

Dried herbs but home made stock (made with dried herbs)

??

I would prefer to use a good homemade stock and dried herbs.
I have used canned stock. It just ain't the same.

welcome to dc from manchester uk.as hoot said you can't beat home made stock imo.having said that there are some pretty good liquid/gel stocks about over here,so,because i prefer to use fresh herbs i'd go for a good canned stock & fresh herbs

That's the best. Not always an option for me, though, due to costs, particularly in the off-season. Some plants grow well indoors and some don't.

most fresh herbs freeze really well stockpot so,if you prefer canned/fresh herbs why not grow extra in season & freeze the surplus to use in the off season?not quite fresh but darn near!!

Good idea. I would always got with the homemade stock, though, no matter what. That's the main thing for me.

Welcome, Stock Pot! Boy, that's a tough question....I guess if I had to choose I would go with the homemade stock and dried herbs. But in a perfect world I would have both.
