From what kind of wheat seeds does wheat grass sprout?

When I tried to decide what wheat I wanted to grind up to be flour, I saw the choices between "hard red spring" or "soft white winter." For wheat grass that people either juice it or cook it, what kind of wheat is it? Does it make a difference one way or another? Thanks
 
Thanks for the info. I thought that Triticum aestivum, known as common wheat (bread wheat), includes all the wheat types we use in baking. I did not know that Triticum aestivum is a separate type of wheat. Thanks for the clarification
