Roasted Tomatoes

One of the things I love about dehyrated tomatoes is the intensity of the tomato flavor-tomato chips-ditto for the roasted tomatoes. Yum-yum. And, re: skinning them--well, I didn't want to throw the skins away and the chicks like the seeds (since I seed the tomatoes before roasting).

Could one not drain canned tomatoes and roast them? I don't use store-bought canned tomatoes since we have so many tomato plants--just a thought?

The LCBO Food and Drink Magazine had a couple of recipes for tomato water, including a tom-tini (i think that is what it was called).
