When do I pick my peck of peppers?

We got some free, mystery pepper plants..
I know when to pick the bell and jalapeno, but....

I have what I think are wax peppers.. do they turn red?
(These look like really big cayennes, light yellow green.)

And maybe some banana peppers.. when are they ready?

I could post photos if that helps.

None of the wax or banana peppers I ever grew turned red (although there may be varieties that do so). A pale waxy yellow is the ripe stage - thus the names "wax" & "banana". If you're not really sure what varieties they are, be sure & do a small taste test before using them in recipes - some of those are mighty hot!!

You can eat peppers at any stage, from tiny to all the way ripe. Pick one and taste it.
