I guess mentally, it just conjures up what would be a meat style fruit roll up. ground meat, and jerky are just two culinary terms I don't think of together, but you have me intrigued.
Then you need to try it. :) I think, ground meat jerky is even better than regular jerky. The texture is different, the taste is better though.

But does it have the chew longevity of traditional style jerky? The cuts are what makes a good, long lasting jerky. using ground meat, I just don't see it lasting NEAR as long as traditional cuts. . .call me silly, but one thing I love about great jerky, is the fact it lasts in the mouth. Like non-smoker Meat chaw. My boys out at Green Light jerky have it down, and I LOVE the fact I can chaw on it for 30min or more.

No, you won't chew ground meat jerky for 30 min. :-) But you definitely will chew it some time. :-) It's just not that chewy. But the more you dry it, the more hard and chewy it will be. It's very tasty, like a normal jerky. I'd say, the taste is even stronger. It's hard to explain, you need to try it. I love chicken jerky. Not ground, just chicken breast. It's not that very chewy like beef jerky since chicken meat is more tender. But it's yummy! I love fish jerky too. It's interesting... The cheaper the fish is, the better the jerky will be. :-)
