Since moving north I've embraced many facets of the culture. Spring of course brings morels here and having heard much about them I was curious. Unfortunately no one wants to give much info on finding them and NO ONE wants to take you out hunting. I did finally get to try some and they are wonderful. So this year I bought some (yes, they were expensive but what else was I to do). Now how do I preserve them? I've check several web sites and there doesn't seem to be any clear answers. Do you wash the morels or not? What's the best way to dry(dehydrate) them? How do you store them once they are dried? I am looking forward to any and all feedback!

My first thought is to dry them. Brush them off to remove as much "debris" as you can. Slice or leave whole and dry using a dehydrator, which is what I have. Can't offer advice on drying any other day. Once dried, store in a clean, airtight container. Should last a nice long time once dried. Good luck with more answers.
