Light freezing before slicing

I have heard that one of the secrets of dehydrating food is to get the food slices to be as uniform as possible. To that end I am looking at getting an inexpensive slicer. I know that when I want to slice pork tenderloin to almost paper thin slices it is easy to do if I pop the pork in the freezer for an hour or two first.

Can this be done for softer fruits - like strawberries? or even mango?
