Here's another stuffing recipe. I haven't tried it.
Apricot Pecan Stuffing
Makes: about 6 c
1 c leeks, sliced, about 3 medium leeks
½ c onion chopped
¼ c margarine or butter
2 medium apples peeled, cored, and chopped
1 c chopped pecans
¾ c snipped dried apricots
½ t ground nutmeg
4 c dry whole wheat or white bread cubes
1 T fresh rosemary
1 T fresh thyme
1 T fresh parsley
½ - ¾ c half-and-half
-or- light cream
1 egg beaten
1 t salt
½ t pepper
Cook leeks and onion over medium heat in hot margarine or butter until tender but not brown. Stir in apples, nuts, apricots, and nutmeg. Cook and stir for 3 minutes more. In a large bowl toss together bread cubes, rosemary, thyme, parsley and cooked onion mixture. In small bowl combine ½ c of the half-and-half, the egg, salt and pepper. Add to bread mixture and stir gently to coat. Add enough additional cream , if necessary, to make the desired consistency. Use to stuff turkey or place in a greased 1 ½ qt casserole, cover and bake at 325ºF for 25 minutes, then uncover and bake an additional 10 – 15 minutes or until heated through. Enjoy!
