Here is some BBQ we made Labor Day with a great Citrus Salad dressing. I have posted all the recipes below. The BBQ sauce recipe is my brothers and I love it. Its tangy and sweet, great all around. Enjoy!

Knox's Yummy Chicken

3 Tablespoons Knox's Yummy Chicken Dry Rub
5 Large Chicken thighs

Rub chicken with Knox's Yummy Chicken Dry Rub and grill to perfection. Yummm.

Tim's Killer BBQ Sauce

2 Tablespoons Butter, yes butter
1 Onion
1 Jalapeno Pepper
1/2 Red Bell Pepper
2 fat cloves Garlic
1 1/2 cups Ketsup, Catsup, whatever
1/2 cup Brown Sugar packed
1/4 cup Red Wine Vinegar
2 Tablespoons Worchestershire Sauce
1 or so Tablespoons Yellow Mustard
1/4 teaspoon Cinnamon
Zest of a lemon

Chop Onion, Red Bell, Jalapeno and Garlic until bbq sauce size. I like them small. Sautee in Butter until slightly brown. Add everything else and stir until wonderful. Remove from heat and place in a serving bowl or bottle.


Citrus Spinach Salad

1 Egg
2 Tablespoons Sugar
2 Tablespoons Vinegar
1 Tablespoon Water
Pinch of Salt
Zest of one large Orange
1/2 LB or more fresh spinach

In a sauce pan over medium heat constantly wisk everything but the spinach until it foams up into a sauce. Remove from heat and allow to cool. You can add Mayo to stretch this out if you need to. Spoon over fresh spinach.

Citrus Shrimp Marinade

Juice and zest of 2 large Oranges and Lemons
Handful minced Onion
2 Tablespoons Olive Oil
Tablespoon Red Pepper Flakes
Fat pinch of salt

Marinade shrimp for at least an hour. Grill on hot grill for a couple minutes on each side. Keep an eye on them as they will be done before you know it.
