Chicken and Asparagus Stir Fry

Chicken and Asparagus Stir Fry

Recipe:
8oz Sliced Chicken Breast
Marinade Chicken with
Splash of Rice Wine
Splash of Soy Sauce
1-teaspoon Cornstarch

Sauce:
½ Cup Chicken Stock
3 Tablespoons Black Vinegar
2 Tablespoons Dark Soy Sauce
¼ Tablespoon Sugar

Veggies:
½ Tablespoon Ginger
½ Tablespoon Garlic
1 Bunch Asparagus Divided into tops and bottoms
Sliced Onion

Cooking Oil (I like peanut oil)

Thickening Slurry: 2 Tablespoons Chicken Stock & 1 Tablespoon Cornstarch

Add oil to hot wok
add onion and bottom part of asparagus and cover for one minute.
add chicken and brown
add ginger, garlic and Asparagus
When everything is cooked add sauce and heat
add in some slurry to thicken

Looks delish. My kinda dish, PP. I like that you added chicken stock (instead of water) for the slurry. Will keep that in mind. What is black vinegar?

ETA: Bet this would be great w/ beef etc., as well.

Chinese black vinegar is a somewhat thick, deeply flavored vinegar similar to balsamic but savory, not sweet. I got some at an Asian grocery store for another stir-fry recipe. It's delicious, but I'm a vinegar fiend. I have 11 vinegars in my pantry.

Perfect explanation. I am was not a big fan a vinegar but slowly coming around. So I was scarred to try Black Vinegar but now that I have I like to use it.

Looks fantastic, I better start cooking, I must have 6 different things I want to try today.
