Post Easy Chicken Breasts With Sweet Pepper Strips



4 skinless, boneless chicken breast halves, about 2 pounds
Salt and freshly ground pepper
3 tablespoons unsalted butter
1/2 teaspoon finely minced garlic
1/2 pound sweet red or green peppers, cored, seeded and cut into thin strips, about 2 cups
1/2 cup dry white wine
1 tablespoon finely chopped parsley


Sprinkle the chicken with salt and a generous grinding of pepper.

Heat 2 tablespoons of butter in a skillet and add the chicken pieces, skin-side down. Cook for about 4 minutes, or until golden brown on one side. Turn and continue cooking for about 4 minutes.

Add the garlic and pepper strips. Cook for about 4 minutes. Add the wine. Cover and cook for about 4 minutes longer.

Remove the chicken pieces to a warm serving dish.

Add the remaining tablespoon of butter to the peppers and stir. Pour the peppers and sauce over the chicken. Sprinkle with parsley. Serves 4.

Sounds wonderful. I love peppers. I bet this is really pretty too.
I think I'd use some red and yellow or orange peppers.
