Experimenting with leftover chicken

I had some leftover roast chicken and wanted some lunch. So I cut up some chicken, added EVOO... tasted it, it was good but needed something else. I added Orange infused balsamic vinegar, tasted it , it was good but still could use something else. Added some mayo , tasted it and ate the all the chicken in the bowl. I guess it was a chicken salad. but I didn't have it on bread or lettuce.

Yum. That sounds really good. Sounds like you're on to something. Maybe add some finely chopped red onion? Toasted chopped almonds? Use it to fill a halved tomato?

I like chicken salad with chopped scallions and a little sweet curry powder.

Those are all good additions MK - but, can I have mine in an avocado half?

Elsie - good going with your concoction! I love doing that too! Nice combination - especially the orange balsamic.l
