FOILED CHICKEN

Chicken Breasts
2 Tblsp. Oil
1/2 stick Butter, (or more) melted
1 tsp. Thyme
1 tsp. Sage
2 Tblsp. chopped Fresh Parsley
1/4 cup Parmesan Cheese
2/3 cup Seasoned (or not) Bread Crumbs
Aluminum Foil

Sear the Chicken Breasts in Oil on both sides, lightly browned.
Combine the Thyme, Sage, Parsley & Parmesan with the Bread Crumbs.
Roll the Chicken Breasts in the Melted Butter, then Roll them in the Bread Crumb Mixture.

Wrap individual Chicken Breasts in Foil and Bake at 400 degrees for approximately 40 minutes until cooked & tender.
Open foil and Broil for several minutes to 'crisp' the exterior if desired.

This sounds perfect Chef :chef:

We are always looking for recipes cooking chicken breasts in the oven!

Could you use rosemary instead of sage? As we have the rosemary and the thyme but no sage?

Absolutely, you could use Rosemary instead of Sage.
Some people may not like the way the chicken comes out of the foil, the appearance and texture are moist & soft. We like how it is so very tender and the searing beforehand and the foil really makes the chicken juicy and tender.
I have also baked this at 375 in a baking dish, which browns and crisps the top. It is great. Try the broiling near the end of the cooking time to 'crisp' it up. XOxo

Thanks Chef :)

I love the idea of the tender, juicy chicken...but a nice idea too crisp it up :yum:
