My hubby made this for dinner the other night. OMG it was gorgeous! I told him he can stay another week lol

Ingredients
- 2 Free range chicken breasts
- 4 Rashers Parma ham
- 6oz/170g Mushrooms (thinly sliced)
- 2 tsp Whole grain mustard
- 2 tsp Extra virgin olive oil
- Salt and freshly ground black pepper
- Use enough aluminium foil to create a parcel for each chicken breast
- Spread 1 tsp of extra virgin olive oil on each piece of foil
- Lay 2 rashers of parma ham side by side on each piece of foil
- Spread 1 tsp whole grain mustard over the parma ham
- Lay the chicken breast on top of the ham, cover with mushrooms and season with salt and freshly ground black pepper
- Fold the foil over the top to form a parcel and seal
- Place in a pre heated oven 220°C/425 °F/gas mark 7 for 20 minutes, open the parcel and cook for a further 10 minutes
- Serve with roasted vegetables
