How to boil chicken?

I'd like to make some chicken and yellow rice for dinner, but i have heard of boiling chicken. Is it ok to do that?

BOILING chicken makes it rubbery. You should cook it at a bare simmer.

Or bring to a boil, cover and turn off the heat entirely.
