ISO chicken liver recipes

I decided to add this to my diet.Besides simple liver & onion,& liquefied liver pudding recipes. What are some other recipes?
I thought of sauteing the livers.And adding lacinato kale,broccoli,quinoa,& wild rice.Some garlic,shiitake mushroom,red bell pepper,cayenne,turmeric,black pepper.Put it in spring rolls,served on radicchio.Soy sauce for a dip.
Sounds great, but never had this combo with liver.

Dirty Rice.
Chef Paul's Recipes - Chef Paul Prudhomme

We don't use the gizzards and make the spice seasoning from one of his cookbooks. If you're interested I'll post the seasoning ingredients.

Chopped Liver...

In the South they are usually breaded and fried, then dipped in Cream Gravy..

I think the Italians use them in Pasta sauces, or just Tossed with pasta and greens..

Malto Mario.. the TV chef uses them often..

This recipe is crepe, I use dry marsala instead of madeira.
