ISO Fried Chicken REC that isn't too crunchy

I have some chicken tenders in buttermilk (with paprika, salt, pepper, onion and garlic) waiting for supper to arrive.

I plan on making fried chicken with it but need a crust that isn't too crunchy. DH has "soft" teeth that easily break on hard food.

Any time I make fried chicken, he says its too hard for him

Any suggestions?
 
I would just shake off the excess buttermilk, dredge in seasoned flour and then fry with the lid on (this will kind of steam it along with the frying and keep the crust from getting too crunchy) the skillet. Keep an eye as tenders cook fast.
