I'm going to be making some chicken/spinach enchiladas today & will be poaching my boneless/skinless chicken breasts to shred for the filling.

Since the package of breasts is frozen, is there any difference or preference to poaching them frozen or thawing them in the microwave first?

Thanks!

The exterior parts of the chicken will be overcooked by the time the center is done. Not a huge disaster with poaching but still a consideration. Also, I would defrost under cold running water before using the microwave.

I ended up running the breasts under running water just until they thawed enough to break apart, then poached them in gently simmering water for 20 minutes. They turned out perfect - no overcook/undercook - & are now happily ensconsed inside my enchiladas baking in the oven.
