This is my kind of comfort food. Sometimes I like taking one simple recipe, and turning it into a great meal... i.e. serve with roasted herb potatoes (or wild rice), broiled/grilled tomatoes with buttered crumbs and topped with a little feta, a simple (green) roasted veggie (or squash), salad, hot rolls, dessert and some white wine - and ta da - dinner is ready.

Lemon Herb Garlic Chicken with Feta

1 (2 ½ to 3 pound) chicken, cut up
¼ cup olive oil
½ cup fresh lemon juice
1 envelope Savory Herb and Garlic Soup Mix
1 lemon, cut into thin slices for garnish
½ cup crumbled feta cheese for garnish
2 teaspoons fresh oregano for garnish

Preheat the broiler for 10 minutes. Arrange the chicken skin side down on a rimmed baking sheet lined with aluminum foil. Broil the chicken for 4 minutes. Turn the chicken and broil another 5 minutes until the skin begins to turn golden. Turn the heat on the oven to 400 degrees.

While the chicken is broiling, in a small bowl, combine the oil, lemon juice and soup mix, whisking to blend. Pour the sauce over the chicken and bake for 20 minutes, basting with the sauce half-way through.

Remove the chicken from the pan to a serving platter. Skim fat from sauce and pour it over the chicken. Garnish with lemon slices, feta and oregano.

Can be done with chicken wings for an appetizer.
