Hey there i bought some pre marinated chicken breasts marinated in an ancho coriander marinade. They look and smell delicious, i will be cooking them tommorow for lunch.

I just want to cook these up slice em up and throw em in corn tortillas.

What is the best way to cook them for this?

If i sear them first, do i have to be very careful to completely pat them dry? Not sure if this will work as they have been soaking in the liquid mixture for probably a day. Will patting them dry be sufficient or will they steam rather than sear regardless?

These will be whole breasts, but butteflyed into two parts but still connected.

Should i just forget searing and throw them in the oven?

Thanks.

It may be too late now, but do you have access to a grill at this time of year? (I live in FL so we grill year-round, but I know of some die-hard folks who keep a path to their grill shoveled no matter what the weather!) To me, any fajita meat tastes best grilled.
