Ingredients

2 cups oil
500g chicken stir-fry (strips)
60g seasoned flour
4 tbsp orange juice
4 tbsp olive oil
1 tbsp chopped mint
1/2 tsp salt
black pepper
1 sliced avocado
425 can apricots, drained and halves, reserve 2 tbsp juice from can
snow pea sprouts
Deep the chicken strips in the flour and deep-fry in the hot oil.
Drain and place in a bowl
Combine orange juice, oil, mint, 2 tbsp apricot juice and season to taste
Arrange snow pea sprouts on plates, top with chicken strips, avocado pieces and apricots halves, drizzle the sauce over salad.
