This is a great chicken recipe!

Pretzel Chicken with Fruit Sauce
4 boneless, skinless, chicken breasts
1/2 block cream cheese, softened
1/2 c fruit jam (strawberry, apricot, marmalade, peach, etc)
2 c pretzels, crushed
Sauce:
1 c fruit jam (same flavor as above)
1 c picante sauce or salsa, smooth-style
Cilantro or parsley for garnish

Preheat oven to 350F
1.Flatten chicken breasts gently with a mallet to a 1/4 inch thickness.
2.Spread softened cream cheese over one side of breast. Starting at one end, roll chicken breast, with the cheese inside, in a jelly roll fashion. Secure with a toothpick.
3.Melt 1/2 c jam in a medium bowl in microwave until thinned. Dip rolled breasts into the jam, coating well on all sides.
4.Roll jam-coated breasts in pretzel crumbs and place in a baking pan, seam side down.
5.Bake for 25-30 mins or until chicken is just done, but juicy in the middle, with a crispy crust.
6.For sauce, combine 1 c jam and picante/salsa in a saucepan over medium heat. Cook mixture until it is reduced and slightly thickened.
7.To serve, place one breast over a bed of rice, and spoon sauce over top. Garnish with cilantro or parsley.
