Rec. Stuffed Chicken

I Tasted this yesterday and got my daughter to give me the recipe...
this is different for me and I really liked it.
She used 4-1/2 cups of cooked brown rice. to which she added,1-1/2 c. golden raisins,that were plumped in 1/4c. bourbon. She drained and saved the bourbon. Saute the raisins in 1/2lb of butter add 1 small chopped onion and saute until soft but not brown. Remove from heat add salt and rice and about a 1/4 c. pine nuts.
Cool, then stuff your chicken. She kept brushing the chicken off and on til done. with the reserved bourbon. I'm more of a rice lover than pasta and felt this was really good. It makes about 6 cups...

Seriously, though, that sounds fantastic. I have a bird in the freezer that's going have this treatment.
