Kitchen dish of the week

Chicken with dijon sauce

Sauce
4 garlic cloves diced
9 shallots diced
like 1 1/2 cups of white wine
some heavy cream enough to cover almost a frying pan
some beef demiglaze
Chicken breast just salt pepper
2 springs of thyme
Dijon mustard like 3 tablespoons and mix in with heavy cream

Making the sauce

In a frying pan throw in some olive oil like covers half of the
1. First make sure the oil is hot then throw in the chicken and brown both sides and remove and put it on a baking tray
2. add in shallots and garlic brown em don't burn by stiring them around a lot
3. Put in the white wine and let it boil and reduce it to when theres only a little liquid
4. add in heavey cream and dijon mustard stuff
5. stir around and throw in thyme and mix and let it boil.
6 reduce heat once it starts boiling and let it simmer
7. add in demiglaze and mix and let it boil and simmer for awhile
8. strain and its done

9. for the chicken bake it until done and put with sauce

we had to make like 30 chicken breasts
